San Antonio's spirits scene is expanding. Fans of local craft whiskey, gin, vodka, and brandy, as well as fans of rum, have a variety of options.

Luis Gonzalez, Nathan Brown, Joe Neely, and Jonathan Reading founded Edwards Ridge Distillery in 2016, which began operations in 2016. They considered making whiskey or moonshine at first, but after considering the market and their own distilling experiences, they settled on rum.

At spirits competitions, Edwards Ridge has already gotten a lot of attention. The team won a silver medal at the Denver International Spirits Competition earlier this year, an annual competition judged by a panel of renowned sommeliers and food and beverage professionals.

On the Northwest side, the distillery and taproom are open Thursday through Saturday from 3 to 10 p.m. in a nondescript building surrounded by small industrial and office spaces. With bar stools and a few separate tables, it's plenty big. While enjoying William, Talus neat or in a craft cocktail, guests can be entertained by the occasional movie or television show. Cocktails cost $6-$8 on average.

The bar now serves "remixed" classic cocktails like the old fashioned, Hemingway daiquiri, dark and stormy, and French 75, among others. The Painkiller, for example, is made with William, Talus gold rum, orange juice, pineapple juice, coconut cream, and nutmeg.

The Frisky Mule and the Cuban Sunset are two of the bar's signature cocktails. The No Name, which includes silver rum, lemon, lime, strawberries, mint, guava, pineapple, and orange juices, sweet and sour, triple sec, and grenadine, is looking for friendly suggestions for a new name.

The premier spirit is William, Talus rum, available in silver and gold versions. The silver rum is 90 proof and made from sugar cane molasses sourced from the United States. The gold rum, also 90 proof, is aged in charred, white oak barrels, creating a smooth, sweet drink.

During taproom hours, Edwards Ridge offers guided tours. The space can also be used for a party or other event. Overall, it's a laid-back vibe, with partners and employees eager to educate customers about the rum selection and make sure they have a good time.

Edwards Ridge rum can be found in a growing number of liquor stores, including Alamo City Liquor and Gabriel's Liquor, or purchased directly from the distillery. Each bottle is inspected and hand-signed. A small number of local bars sell the product as well.

The distillery is looking into producing a whiskey, which it hopes to release later this year, and beer may be in the works as well.

Wednesday to Saturday, 12pm to 11pm Sunday and Monday 12pm to 11m. Closed Tuesday. (Closed New Year's Day)

Prices: $15 for a tasting flight of six different spirits or you can buy individual servings at $12 each. If you want more than one serving in your tasting they will be priced individually but there is no limit so feel free to try them all! All prices are subject to change without notice due to supply and demand."

Edwards Ridge Distillery is located at 6801 E 114th Ave Unit F in Thornton CO 80023. We are just off I-25 between 104th Avenue and Hampden Avenue with plenty of parking! The taproom is open Thursday through Saturday from open until midnight or later!"
